
Cooper’s Hawk eyes another Southeast Wisconsin location
A third Cooper’s Hawk Winery & Restaurant could be coming to Wisconsin’s southeast region.
Steven Bersell, representing property owner FRED-Northwest Lot 4 LLC, has submitted site and operational plans to the village for a Cooper’s Hawk location at the southwest corner of State Highway 50 and 115th Avenue, village documents show.
Rob Hanson, community development director for Pleasant Prairie, said the proposed restaurant would be built within a tax incremental district that includes 127 acres. It has also seen construction of a dual-concept Buona and The Original Rainbow Cone as well as the Seasons at River View apartment complex since its creation in 2021.
Hanson said the community is excited to have “a little bit more of a formal-style restaurant” in the works for Pleasant Prairie.
“As the village grows here, people want options. This is certainly going to provide an exciting option for folks in the community,” Hanson said.
Plans call for construction of Cooper’s Hawk to begin this summer, with anticipated completion in the summer of 2026 on the 11,100-square-foot restaurant and winery.
The proposal shows plans for covered outdoor seating at the restaurant on the south side of the building. The site would provide 163 parking spaces.
The Pleasant Prairie location is planned to employ 100 full-time and 50 part-time employees working two shifts, according to village documents.
Pleasant Prairie’s Plan Commission is scheduled to review the proposal Monday evening.
Founded in 2005 by CEO Tim McEnery, Cooper’s Hawk operates more than 55 locations nationwide, according to the company’s website.
